When it comes to Colombia, it is widely accepted that some of the country’s best coffees come from the south west in the departments of Huila, Tolima, Nariño and Cauca. This is a fabulous coffee that is produced by a group of farmers situated in the southern town of La Plata in Huila who all share the same microclimate. Each producer has around 3 to 7 hectares of land planted with coffee and shade trees of plantain and guamo – ripe red cherry is harvested and processed on each smallholding using their own micro wet mill.

This Coffee's Story

When it comes to Colombia, it is widely accepted that some of the country’s best coffees come from the south west in the departments of Huila, Tolima, Nariño and Cauca. This is a fabulous coffee that is produced by a group of farmers situated in the southern town of La Plata in Huila who all share the same microclimate. Each producer has around 3 to 7 hectares of land planted with coffee and shade trees of plantain and guamo – ripe red cherry is harvested and processed on each smallholding using their own micro wet mill. They will also dry the coffee themselves in its outer parchment layer to the exacting standards put in place by the agronomists they work closely with to guarantee the coffee’s quality. Drying is probably one of the most important factors in guaranteeing a quality cup profile – too quick and the coffee can lose its character very quickly, too slow and it runs the risk of becoming mouldy with uneven moisture levels. Most smallholders in this region have small parabolic driers loaded with raised beds stacked on top of one another to allow good airflow and easy rotation ensuring good even drying. This region is very prone to rainfall so it is of paramount importance that the coffee is sheltered for the 22-30 days it spends drying.

This lot is named after the star of the Southern Wind that sits directly above the coffee growing mountainous region in La Plata. We really think this lot displays excellent clarity and showcases the efforts of the growers perfectly. Thanks to the great balance of acidity and body, this is a coffee that works beautifully in most brew methods and can also take a bit of milk too.
This is a super clean washed lot best suited to be enjoyed without milk on paper filter methods.

Local Pick Ups

Local pickups take place from the Roastery on Tong Road. Please note our shutter doors will be down for security and temperature reasons but we are always in Monday-Friday between 9 and 5pm – just ring the doorbell on arrival

Full of deep flavour

Enjoyed this roast. Easy to grind and a deep flavour that you expect from a Colombian bean. Fruity with a mellow sweetness. Give it a short pre infusion on the espresso and you can draw out the marzipan taste. It’s a easy to drink coffee than you can use all day long. Slightly acidic that you can adjust with going slightly over on the extraction. Would buy again and one that my wife enjoyed also in a Longer drink as the flavours will hold there own.
