This Coffee's Story

Introducing the coffee that started it all. Our faithful house blend may have undergone a name change and minor facelift in the last eight years but the components and delicious taste profile have essentially remained the same. Back in 2013 Leeds was somewhat of a stronghold for darker roasted commercial coffee and we were faced with the big ol’ task of introducing many traditional espresso drinkers to the World of Specialty Coffee… and so ‘The Docks’ was born! A blend which we felt successfully bridged the gap between old and new, embracing many of the characteristics of the traditional whilst embodying key principles of contemporary specialty production. Highlighting the work of amazing producers from across the tropics by profiling and roasting their beans to a medium level before blending them to create a characterful cup.

This blend supports many of our all-time hero producing partners here at North Star, featuring coffees from young innovator and trail blazer Marcelo Montanari (owner of Fazenda Rainha Da Paz in Brazil) and Maria Zoila Pineda, the focus of our very first Infrastructure Project at origin (and member of the legendary Chelazos cooperative in La Palma, El Salvador).

Components:

40% Brazil Fazenda 7 Cachoeiras

A classic Brazilian coffee with low to medium acidity and intense notes of milk chocolate and roasted nuts. Full bodied and creamy in mouthfeel, this is a staple coffee from an amazing and relatively young farm in Três Pontas, Minas Gerais. The Brito family are paving their way in the area fast gaining a reputation for innovation and social and environmental responsibility.

40% El Salvador Chelazos

We are so proud of this coffee having sourced it during a trip to El Salvador in February 2017 from B Corp partners Caravela Coffee. Determined to work with small scale producers where possible, we chose the region of Chalatenango to source our coffee from and came across a group of incredibly determined and focused farmers defying the challenges of the area and remaining committed to the principles of quality coffee production. The result is juicy, clean, balanced and bursting with plum and marzipan.

20% Sumatra Ara Cahayani Gayo

Sumatra is possibly one of the most challenging origins to work with when looking for quality, its unique processing method and infrastructure can result in coffees that display a real woody, earthy character. This classic wet hulled lot comes from Ara Cahayani co-op in Aceh, northern Sumatra. The co-operative was started by 25 farmers but now comprises of around that 2500 micro entrepreneurs in the Bener Mariah subregion. Expect a flavour profile that is intense and full bodied. This coffee has deep notes of dark chocolate, tamarind and plum.
After learning more about Marcelo and his mission it is clear that the values and principles we hold dear are shared with those that have gone on to shape Fazenda 7 Cachoeiras. A mission that is underpinned by a desire to produce high quality specialty coffees, whilst respecting and conserving the environment and providing better working conditions for the employee’s responsible for it’s production.

Quality focused, modern farming practices have been introduced over the years and mechanisation for picking allows for consistent supply and efficient production. The farm is also carbon neutral, through carbon insetting, which is the process of offsetting it’s emissions on-site. An achievement reached through a combination of solar panels, using parchment to fire the dryers and going above the legal requirement of leaving 20% of land as wild ‘reserve’.

In addition, 7 Cachoeiras is both UTZ and Rainforest Alliance certified, though Marcelo and his family are fairly unique in that their own practices and standards have always gone way beyond what is required for certification. And as well as their commitment to the environment, there is a clear focus on social empowerment within the workforce on the estate. Employees have access to education and health care services, are paid more than double the minimum wage for their work and are even eligible to a bonus each month that can reach as high as 30-40% of this wage. The criteria of this bonus is based on positive impact at both work and in the home, ensuring an improvement to the lives of not just the staff, but their families too!

Always my goto supplier of fresh beans

I’ve tried many different brands, but Northstar is by far my favourite supplier. Not only is their coffee amazing, but their value and customer service is second to non. I have a rolling subscription with them which makes it a little cheaper too. I have no need or desire to shop elsewhere.

Subscription

Easy to order. Would have liked the opportunity to order a subscription for 3 or 6 months rather than an ongoing subscription which I then have to cancel.
