Coffee FAQ
I’m new to specialty coffee, where should I start?
Start with the coffees you naturally enjoy already.
If you tend to like smoother, comforting coffees with chocolate, caramel or nutty flavours, our Base Range is usually the best place to begin. If you enjoy brighter, fruitier or more expressive coffees, you’ll probably love exploring our Explore Range.
Honestly, the best coffee is usually the one you actually want another cup of.
What’s the difference between your Base and Explore ranges?
Our Base Range is built around coffees that feel easy to return to every day, balanced, comforting and approachable with flavours like chocolate, toasted nuts and softer fruit notes.
Our Explore Range leans more toward brighter, fruitier and more expressive coffees, the sort that often surprise people in the best way.
Does specialty coffee always taste fruity or acidic?
Not at all.
Specialty coffee simply means more care and attention paid throughout the supply chain, from sourcing and roasting through to brewing.
Some specialty coffees can taste bright and fruity, but many are comforting, chocolatey, nutty and incredibly easy to drink.
That’s exactly why we split our coffees into Base and Explore, so there’s space for both.
What does North Star coffee actually taste like?
We roast to bring out the natural character of each coffee rather than adding heavy roasted flavours through darker roasting.
That means coffees that feel sweeter, cleaner and more expressive of where and how they were grown.
Some coffees lean toward chocolate and nuts, others toward berries, citrus or florals, but our aim is always balance, clarity and a coffee you genuinely look forward to drinking.
Will your coffee work with milk?
Absolutely. Many of our coffees are specifically selected and roasted to taste great both black and with milk. If you enjoy flat whites, cappuccinos or milkier coffees, our Base Range is usually a great place to start.
Which coffees are best for filter brewing?
Our Explore Range coffees often shine particularly well as filter brews thanks to their more delicate and expressive flavour profiles, though many of our coffees work beautifully across multiple brewing methods.
Each product page includes recommended brewing approaches to help guide you.
Can I use your coffee in a bean-to-cup machine?
Yes, all of our coffees can be used in bean-to-cup machines.
If you’re unsure where to start, we’d usually recommend one of our Base Range coffees as they tend to be especially balanced and forgiving across a range of home setups.
Do your coffees work for both espresso and filter?
Most of them do.
Many of our coffees are selected and roasted to work beautifully across brewing methods, though some may particularly shine as either espresso or filter depending on their flavour profile.
We include brewing recommendations on each coffee page to help guide you.
Do you offer decaf?
We do, and we care about it just as much as the rest of our coffee.
Our decaf comes from a long-standing producing partner in Brazil and uses a CO2 decaffeination process designed to retain as much sweetness, balance and character as possible.
It’s sweet, balanced and genuinely satisfying, just without the caffeine.
How fresh is your coffee?
All of our coffee is roasted here in Leeds.
You’ll find the roast date printed on every bag. For most coffees, we recommend brewing within three months of roast date, with the coffee typically tasting its absolute best within the first month after opening.
Should I let the coffee rest before brewing?
Yes, especially for espresso.
Freshly roasted coffee releases carbon dioxide over time, and allowing the coffee to rest for around 5–7 days after roast date usually helps create a more balanced and consistent brew.
That said, there are no coffee police. If you can’t resist opening the bag early, we completely understand.
How should I store my coffee?
Keep your coffee airtight and stored somewhere cool and dry, away from direct sunlight.
Our 250g bags include a zip-lock seal, though airtight containers work brilliantly too.
We generally don’t recommend storing coffee in the fridge, as coffee absorbs surrounding aromas very easily.
Why is specialty coffee more expensive?
Coffee is one of the most labour-intensive agricultural products in the world, yet historically many producers have been paid unsustainably low prices for it.
We believe better coffee should create more value throughout the supply chain, helping support long-term producer relationships, more sustainable farming practices and higher-quality coffee overall.
A huge amount of work, risk and care sits behind every cup.
How do you source your coffee?
We work closely with producers, exporters and producing partners we trust, focusing on long-term relationships, transparency and quality.
Rather than chasing short-term trends, we aim to build partnerships that create more stability and long-term value for the people growing the coffee as well as the people drinking it.

Packaging FAQ
Are your coffee bags compostable?
Our 250g coffee bags are made using compostable materials designed to break down in a well-managed home compost setup.
Our 1kg bags are currently recyclable LDPE4 plastic while we continue testing larger compostable alternatives durable enough for wholesale and larger-format coffee storage.
What if I don’t have a compost bin?
You’re definitely not alone.
You can return your used bags to either our Roastery or Coffee Shop and we’ll make sure they’re properly processed through our waste partners.
We know there’s currently no perfect packaging solution, but we’re committed to continually improving the systems and materials we use.
Can the bags be re-used?
Definitely. The zip-lock seals make them useful for storing everything from coffee and grains to snacks, cables or the random drawer bits everyone seems to accumulate somehow.
