Recommended by Kirri Palmer, Senior Account Manager

"This is one of those coffees I never get bored of. It’s beautifully balanced with just enough fruit to keep things interesting, but still feels incredibly comforting. I love it as a V60 when I’ve got ten minutes to slow down."

How Does The Coffee Perform In The Cup?

Brown sugar sweetness leads the aroma, followed by ripe plum and soft citrus. The first sip is smooth and rounded, with stewed plum bringing gentle richness before blood orange adds a clean, juicy lift that keeps the cup feeling bright rather than heavy. The sweetness lingers into a long, balanced finish, making this a coffee that feels just as at home with milk as it does served black.

Helping small farms thrive for generations to come

This coffee is connected to our long-term partnership with María Zoila Piñeda in El Salvador, where investment in infrastructure and quality has helped create greater stability for her farm and family.

Every bag supports a future where farms like Finca Margarita can continue thriving for generations to come.

Why we chose this coffee

We chose this coffee because it’s a brilliant example of what happens when talented producers are trusted to take ownership of their craft.Every producer in this community washes and processes their own coffee on the farm, giving them complete ownership over the quality and character of every harvest. Alongside Caravela, they regularly cup their coffees together, share ideas and continually refine their approach, helping each year’s crop become a little better than the last.

That commitment to quality inspired us to take our relationship even further. Together with Caravela and producer Maria Zoila Piñeda, Chelazos became the home of North Star’s first producer impact project, investing in infrastructure that helps improve quality, consistency and long-term opportunity. It’s a partnership built on a shared belief that looking after people is one of the best ways to keep making better coffee.

Who produced this coffee?

Chelazos is a community of small coffee producers in the mountains around La Palma, Chalatenango. Farmers including Maria, Alfonso, José and Orlando each oversee their own harvest from picking through to processing, whilst sharing knowledge and best practice across the wider community.

Working closely with Caravela, every harvest is cupped, discussed and refined together, helping producers continually improve quality whilst protecting the unique character of their coffees year after year.

Packaging

Are your coffee bags compostable?

Our 250g coffee bags are made using compostable materials designed to break down in a well-managed home compost setup.

Our 1kg bags are currently recyclable LDPE4 plastic while we continue testing larger compostable alternatives durable enough for wholesale and larger-format coffee storage.

What if I don’t have a compost bin?

You’re definitely not alone. You can return your used bags to either our Roastery or Coffee Shop and we’ll make sure they’re properly processed through our waste partners. We know there’s currently no perfect packaging solution, but we’re committed to continually improving the systems and materials we use.

Can the bags be re-used?

Definitely. The zip-lock seals make them useful for storing everything from coffee and grains to snacks, cables or the random drawer bits everyone seems to accumulate somehow.
