Honduras

Honduras is Central America’s largest coffee producer, the majority of which has historically been traded on the commercial market. However, more recently, lasting relationships between buyer and producer have been allowed to flourish across the country and programs have been established to help farmer’s increase their resilience to current fluctuations in both the market and changing climatic conditions. The ‘Aruco Project’ is one of these programs – launched by Falcon Specialty at the end of 2016 and established with growers in Copan to try and bring about better-quality micro lots, centralise processing and give smaller producers access to specialty markets and quality price premiums. We have been purchasing Aruco lots for the past 5 years and have been bowled over by the outstanding, innovative coffees we have been able to showcase in this time.

This Coffee's Story

This is the fifth year we have supported the Aruco Microlot Programme in Honduras which was set up to increase the income for coffee producers who are facing market and environmental volatility year on year.

We are excited to be revisiting two Aruco Producers that have delighted our palates in past seasons. First up is Señora Blanca Rosa, owner of a 6-hectare farm in the Celaque region of Western Honduras. This is now the second tasty coffee we have featured from this amazing producer as well as the incredible 72hr macerated lot you may have enjoyed a couple of years ago from Frances, one of Blanca’s sons. It is clear that this talented coffee farming family know how to get the best out of their crop!

Blanca Rosa’s farm, San Francisco is totally organic and has been farmed in this way since the 1970s when Blanca and her husband Arturo purchased the land. Many varieties of bananas, lemons, oranges, limes, guava and other native fruit and vegetables grow here amongst the coffee. There are also numerous beehives from which the family harvest honey for their own consumption and to sell locally to diversify their income streams away from just coffee - a sensible move given the increasing number of obstacles that are cropping up through climate change and a volatile market price.

By participating in the micro lot program, Blanca has increased the income she is able to access through her coffee crop despite the decreases she has experienced in the amount of coffee produced. Given the relatively low altitude on her farm, it was decided that her coffee would be at its best as a naturally processed lot to accentuate the natural sweetness and body of the coffee. Blanca oversaw the harvesting of her cherries at the perfect point of ripeness and delivered them to the Aruco milling station which is situated at 800 metres above sea level and is less impacted by regular rainfall which can make drying the cherries challenging. The cherries are laid out on raised beds for 25 days and attentively turned once an hour to bring about even drying and prevent any production associated defects that could negatively impact overall cup quality.

We love our base range naturals here at North Star. And this one is certainly no exception! Super versatile and beautifully sweet, you can expect a creamy body alongside beautiful blackberry and caramel notes. This coffee delivers so much character but is also tremendously balanced making it well suited to a variety of brew methods served with and without milk.

Local Pick Ups

Local pickups take place from the Roastery on Tong Road. Please note our shutter doors will be down for security and temperature reasons but we are always in Monday-Friday between 9 and 5pm – just ring the doorbell on arrival
