Brew Temperature: 100 degrees C
Infusion Time: 3 to 5 mins
Earl Grey is an English favourite and is thought to be named after Charles Grey (British Prime Minister from 1830s) who was given a gift of black tea scented with oil of bergamot. It is incredibly popular and is best served black or with a slice of lemon. The tea for this Earl Grey was sourced from the organic Harrington Estate which is located in the central highlands of Sri Lanka. The estate owners are very environmentally responsible and have created a beautiful ecosystem which protects local wildlife and supports a vast array of plants.
The estate itself covers around 40 hectares at around 1200 metres above sea level, it supports around 110 workers who live on the estate in beautiful staff accommodation. Each house has a small garden for the family to grow vegetables and there is also a school for the children of the farm workers.
Once the black tea has been picked, withered, steamed and dried, it is then taken to a mill in Columbo where it is infused with bergamot oil which provides the distinct citrus note taking this from being a black tea, to an Earl Grey.
