This course aims to provide you with the knowledge and skills necessary to be a sensory leader within a coffee business. Throughout the duration of the course, you will be taught how to bring your tasting skills up to a professional level by:
• understanding the theory and scientific background of sensory analysis
• mastering the preparation protocol
• understanding the methodology
By taking this course, you should:
• be able to set up a sensory panel
• be able to set up sensory facilities
• learn where to apply sensory skills within your business e.g. quality control procedure, shelf life testing etc.
Your tasting skills will be tested by working with:
• SCAA Cupping
• Quality identification
This module represents the very highest level of sensory skills and is recommend for students who have been working for around 1-2 years in a job with high exposure to sensory analysis before taking this course.
Prerequisites for this module of the Coffee Diploma System are:
• Sensory Skills Intermediate (mandatory)
• Sensory Skills Foundation (recommended only)
The course provides you with the key information to enable you to sit your Sensory Skills Professional certification that consists of 4 practical exams and a written exam (35 questions – pass rate of 80% required). Successful students will be awarded 25 points towards the SCAE Coffee Diploma.
This cost does include VAT but does not cover the certification fee as this is dependent on your SCAE membership. Lunch and refreshments will be provided.
All courses take place at the North Star Coffee Academy based at Leeds Dock. We are very easily accessible by either foot (15 minutes from Leeds train station), bus, car (multi-storey car park available on site) or water taxi which goes directly to and from the train station every 20 minutes. There is also a Holiday Inn on site for courses lasting more than a day.
