This in depth course is absolutely suited to the beginner but would add value to anyone no matter their experience. It is a complete overview of the coffee supply chain and is designed to be completed in your own time from the comfort of your own home in your own time with a series of guided practical’s, recorded videos and PDF resources giving you an insight into life in a coffee Roastery and into the various trips to coffee farms completed by North Star over the years.

Upon signing up, you will be able to choose when to ‘activate’ your access to the online course and to arrange receipt of the practical box of goodies (including a Hario V60 Brewer) that you will need to complete the course.


The content of North Star’s Introduction to Coffee course follows that of the SCA (Specialty Coffee Association) version and is not available virtually anywhere else. Chapter 1  – Get started by being able to make great coffee to enjoy whilst taking the course, we kick things off with a brewing video on how to maximise the quality of what you can brew from a common item many of us have in our kitchen cupboard…the french press! Once you are set up with a good brew, we welcome you to the North Star family by giving you a tour of the roastery, introducing the team and telling you about what you can expect over the next 8 weeks. We then move onto our first module which discusses how it was that coffee came to be the industry it is today and of course, explains what coffee actually is!


Chapter 2 – The journey coffee takes from bean to cup. We begin by giving you a tour of the coffeelands showing you where it grows in the world before moving on to the life cycle of a coffee bean right the way from the nursery to the dry mill for export. On the way we show you the three main different processing methods (washed, natural and honey) by showing you footage from our coffee trips showcasing this theory in action.


Chapter 3 – Do you want to be an ethical coffee consumer but don’t know where to start? Confused by all the jargon and different certification schemes? Want to know how coffee is purchased around the world and get the truth behind what actually lies behind the big brands? Then this chapter is for you – led by Hols (who wrote our ethical procurement policy), she will answer all the questions you might have had and tell you how to get to grips with the ethics of what you are buying.


Chapter 4 – Ever wanted a behind the scenes glance into a coffee roastery? Join our production roaster James as he demos one of North Star’s production roasts from start to finish telling you all you need to know about how we take raw coffee and turn it into something that displays over 800 aromatic compounds…


Chapter 5 – Next it is time to delve into the mysterious world of coffee tasting with Hols our in house licensed Q Grader. She will discuss sensory theory before helping you to set up a cupping from home which she will participate in with you (virtually of course!) . This is a unique chance to get an insight into what happens when coffees are assessed for their quality and flavour profile and to understand how flavour notes are generated. She will talk you through her assessment of the coffees as you taste along with her from home so you can really start to understand how to interpret tasting notes to suit your own preference for the coffee you brew at home.


Chapter 6 – Espresso! Once coffee has been harvested, processed, dried, exported, roasted and cupped it is time to brew it! Barista Hustle coach and AST trainer Ollie Sears talks you through the theory of extraction before demonstrating how to prepare the perfect espresso shot. North Star trainer Vicky will then show you how to texture and steam milk correctly to create the glossiest, silkiest milk perfect for creating drinks with standout latte art, which she goes on to show you how to do.


Chapter 7 – Time to get your V60 Pour Over out (included in the box we send you) to brew along from home with Ollie as he talks to you about filter coffee and gives you concrete tips and tricks to help you create consistently great filter coffee from home – so easy you will soon be ditching the jar of instant for good!


Chapter 8 – Troubleshooting – grab a brew and join in the chat with Hols and Ollie as they answer some of the most frequently asked questions we have received over the past 7 years. Frustrated by the amount of conflicting info out there online? Get the final answer on how you should store your coffee, how to interpret ‘strength’ ratings on bags of coffee and what is a flat white?!


Delivery Details

Once you have placed your order, you will receive an email to confirm it is being processed and then another one to let you know when it has been dispatched. We are currently operating with 3 working day lead time to process your order once you have placed it. 

Local pickups take place from the Roastery on Tong Road. Please note our shutter doors will be down for security and temperature reasons but we are always in Monday-Friday between 9 and 5pm – just ring the doorbell on arrival. We are offering free shipping for orders above £20 🙂
