This contemporary seasonal espresso blend is all about showcasing the very best coffees from the most recent harvests taking place throughout the year. With frequently changing components, it aims to promote seasonal coffees that are chosen for their interesting and fresh flavours.
Version 13 is bursting with stone fruits displaying notes of peach and caramel with hints of spice and biscuit – beautifully sweet and syrupy in character with good body and balance, a true showcase of the very best from the most recent harvests across the coffee lands.
Czar Street is made up of the following components:
70% Ethiopia Layo Taraga
Being the birthplace of coffee we always find aromas that are incredibly complex in our Ethiopian coffees and this one is no exception, there are notes of apricot, peach and jasmine resulting in a coffee that is closer to tea in some ways. This lot comes to us from Guji and for the first time ever this year, we can confidently name the washing station that has produced it thanks to the reform put in place by the Ethiopian Government which now allows cooperative owned stations to export their beans directly rather than going through the Ethiopia Commodity Exchange as a certain grade from a particular region. This Bourbon lot has come to us from the Layo Taraga station in the Uraga woreda of the Guji zone in the south. The station was established in 2000 and processes the coffee of 500 smallholder growers who harvest their cherries in the area surrounding the station.
Once picked, the cherries are sorted to ensure only the ripe red ones are sent to be depulped. Following this, the sticky beans are then fermented underwater for 48-72 hours before being washed and then soaked again for between 8 and 16 hours. Finally, the washed beans are dried carefully on raised beds for around 12 days where they are regularly turned throughout this process to ensure even drying. The result is a coffee that is delicate in character with excellent sweetness and complexity.
30% El Salvador Finca Bosque Lya
We have returned to an old favourite for this version of Czar St, Bosque Lya is a farm we have worked with for nearly five years and brings fantastic balance to this blend. Bosque Lya translates to ‘Lya’s Forest’ and is a tribute to the daughter of the farm’s founder Gustavo Vides Valdes who acquired it in 1932. It is a 96 hectare farm with over 30 hectares set aside for a natural rainforest. There is an abundance of shade trees throughout the farm, so much so that it is often difficult to work out what is coffee and what isn’t. With such a fantastic ecosystem it is not surprising that the farm has an abundance of wildlife with armadillos, wild cats, hawks and humming birds making a regular appearance.
El Salvador has historically struggled with incidences of coffee theft being one of the country’s most valuable exports. The coffee on Bosque Lya is therefore harvested by a team of around 300 pickers throughout the season before being taken to the wet mill in Santa Ana known as El Borbollon. Here, the coffee is sorted, depulped, fermented, washed and dried and then rested for around a month and a half in parchment before being prepared for export.
The results are a cup that we want to return to time and time again. Balance is key here with a good mix of aromas too ranging from milk chocolate to plum to caramel. It acts as that all important anchor to the more complex Ethiopia Layo Taraga bringing depth and body to the cup along with hints of biscuit and spice.
We are happy to say we are now able to dispatch orders on a daily basis from Monday to Friday. If your order is received before midnight, it should go out to you the next day using the Royal Mail First Class or DPD next day courier service depending on the weight of the parcel. If you place an order over the weekend, it will be packed and dispatched when the Roastery re-opens on a Monday.
