Colombia is famed for producing some of the most beautiful washed coffees the coffeelands have to offer, prized for their super clean and bright cup profiles. This may be the norm but it certainly doesn’t mean that Colombian producers aren’t also open to experimentation in processing. Take Luis Jose Valdes for example, third generation coffee farmer and producer of our first ever naturally processed Colombian offering. A process he has been experimenting with in the quest to produce a coffee with a rich sweetness that rivals it’s sparkling acidity. Like every producer we work with, Luiz is committed to producing high quality coffee and focused on improving his processes, taking more care with every stage, including picking, processing, and storage.
Finca La Cristalina is nestled just outside Chinchina, in the lesser-known growing region of Caldas which is one of three departments that make up the “Coffee Triangle” – an area that is part of the Colombian Paisa region, which is considered by many to produce some of the finest coffee in the world. Caldas is typically characterised by its deep rivers, steep hills and lush foliage. An impressive and abrupt topography, which creates ideal growing condition for coffee production with a distinct microclimate and rich fertile soil.
Luis’ 21-hectare family farm is home to around 142,000 coffee trees made up of a mixture of 4 different varieties, including Caturra, Castillo, Colombia and Pink Bourbon. This lot is made up solely of Luis’ Caturra varietal, a decision he made due to it’s suitability to natural processing and the sheer quality in the cup this coffee can achieve. Finca La Cristalina has it’s own micro wet mill on-site giving Luis more control over production, allowing him to experiment and add more value to his coffee. Incredible care is taken at each crucial stage of processing making sure that the sugar content of the cherries is high enough, all floaters/immature beans have been removed and the cherry is both fermented and dried for just the right amount of time. The result is a sweet dream of a coffee with with plenty of dark fruit notes and boozy hints of rum with a cola-like mouthfeel. Perfect as a contemporary espresso option but equally clean as a filter coffee too.

Local pickups take place from the Roastery on Tong Road, please note we are still operating social distancing so ring the doorbell when you arrive and we can pass your order through the door. Please note our shutter doors will be down for security and temperature reasons but we are always in Monday-Friday between 9 and 5pm. We are offering free shipping for orders above £20 🙂

Colombia Finca La Cristalina
I love my coffee, and I love Ethiopian coffee the best, but when I tried this Colombian, Finca La Cristalina, I feel in love. Just after opening the bag you can smell that it’s going to be delicious!
Normally don’t love anything outside of Africa but this was something special - keep it coming!
