A sweet and syrupy natural brought to us by the incredible coffee community of El Carmen, Huila. This coffee is beautifully complex bringing both clarity and funk in equal measure. Expect notes of fragrant dried mango, redcurrant jelly and honeysuckle.
We are absolutely delighted to add another coffee to our offer list that has been sourced by the fine folks over at Raw Material, a non-profit social enterprise that is dedicated to securing higher profits for producers while improving coffee quality, yields and ultimately community outcomes.
Raw Material has been working alongside the cooperative Asociación Agropecuaria El Carmen since 2017, a year which saw the inception of their Red Associations Project – designed to help farmers achieve their self-identified goal of achieving stable and sustainable prices for community coffee lots through improved quality control, shared knowledge, and a route into the specialty coffee market.
El Carmen represents around 350 producers who live and work in the foothills surrounding El Carmen de Acevedo, Huila. Both a lack of infrastructure and access to stable prices were key challenges facing members of the coop prior to it’s involvement in the debut iteration of Raw Material’s Red Association Project. These issues have since been addressed and El Carmen now hosts drying bed facilities and QC infrastructure at the community hub in the centre of town which has placed control of coffee quality back into the hands of the producer. A much-improved payment structure has also been implemented resulting in stable and sustainable prices that are up to 2.5x higher than that of the average household income, compared to previous seasons.
To get the best possible results from a quality perspective, these cherries have been transported to and dried at the lower altitude of 1300 masl at Raw Material’s processing centre in Jamaica, Caldas. The heat and humidity at this location is perfect for the drying of naturals and the resulting sweet, bold and characterful cup profile of this tasty community lot certainly delivers outstanding results. Expect a complex cup with notes of dried mango, redcurrant jelly, honeysuckle and a splash of booze. Perfect as a contemporary espresso option but equally clean as a filter coffee too.

Local pickups take place from the Roastery on Tong Road. Please note our shutter doors will be down for security and temperature reasons but we are always in Monday-Friday between 9 and 5pm – just ring the doorbell on arrival. We are offering free shipping for orders above £20 🙂
