One of two Ethiopian lots from exciting new buying partner, Bertu Coffee. A forward-thinking green coffee company that is distancing itself from Ethiopia’s traditional supply chain by creating a buying model that puts farmer first and rewards those who adopt a more long-term mindset. A mindset that emphasises the importance of establishing stronger relationships between producer and buyer. By shifting to this new way of thinking, Bertu sees massive potential to fund project investments back at origin, to introduce additional payments for exceptional cupping coffees, and to ultimately safeguard their producer’s farming operations for the future.

This complex and characterful natural is the namesake of female producer, Dahab Mesfin. An innovative micro-entrepreneur who has a passion for organic production and is a real champion when it comes to inspiring and encouraging fellow female producers in her neighbouring coffee community.

The layout of Dahab’s 330 hectare organic farm, ‘Diamond Estate’, has been organised along with her on-site agronomist to get the very best out of the chosen varietals and micro-climate present in the area. As an organic farm there are high levels of shade which help to create optimal conditions for the production of high-quality naturals. Shade trees protect the coffee plants from sun damage and maturation of their fruit is slower and longer resulting in a sweet and juicy cherry prior to processing. There is a large sun drying facility on-site, which uses raised beds and shade netting to create ideal conditions for the drying of cherries and puts complete control of quality firmly into the hands of Dahab and her farm workers.

Dahab believes that community is key, sharing her knowledge with coffee producers as well as providing free seedlings to neighbouring farms from her extensive nursery of varietals. This year, Dahab has gone one step further and launched a pilot program with a group of 30 female farmers, producing experimental lots with the aim of empowering fellow producers and highlighting how different processing methods can bring about marked increases in coffee quality.

Expect a deliciously elegant, fruity and floral cup that is best enjoyed on paper filter methods (and occasionally espresso). We may like this sweet and juicy brew without milk but have also enjoyed a banging flat white with it too!

Local pickups take place from the Roastery on Tong Road. Please note our shutter doors will be down for security and temperature reasons but we are always in Monday-Friday between 9 and 5pm – just ring the doorbell on arrival
